Unsurprisingly, cooking is about a lot of quick maths and logistics, and large batch cooking is even more so. There are calculations for portioning, ingredients, timing, seating, plating, and much more that have to be done well-in advance of actual service. Most of the considerations don't even cross the average cook's mind as they throw dinner on the pan, but for the next level up, this kind of organization is essential to make sure everyone has a good night. This course should be considered as "pre-professional" and is designed for the ambitious dinner party host who wants to move up past the 4-person small dinners into hosting a proper food event or pop-up for profit. During this 2-hour course, we will go over a framework for proper kitchen planning and teach you some best practices for setting up food events.

Kitchen Calculus 101- How to plan pop-up events

You will learn:

-How to think through the ingredients, chemistry, and flavor of a new dish
-How to organize the order of cooking steps to create a final dish
-New specialized techniques that may be needed to help make your dish
-How to iterate through recipe experimentation quickly and efficiently

This class is a 2-hour personalized 1-1 session for serious cooks who truly want to create their own original recipe but need help thinking through the details and conceptualizing what form and flavor they want their dish to take, and maybe need an environment to test out ideas and learn new techniques. Before this session, you will be able to communicate your idea to us so we can set up our kitchen to help you taste test, practice techniques and serving, and get supervised feedback during the session. The end goal is to facilitate your food creation journey, not necessarily to obtain a finished product.

Recipe Development Consultation

You will learn how to prepare:

-Sambal Kecap 
-Sambal Hijau 
-Sambal Terasi 
-Sambal Matah 

-As well as the history and flavor profile of sambal

This is class is purely about the study of sambal. Sambal is the spicy lifeblood of Indonesian cooking and has as many forms and uses as there are stars in the sky. A well-made sambal can act as a marinade, condiment, and even as a side dish on its own. During this 2-hour course, you will learn to prepare 4 different types of sambal in the traditional style as well as using modern appliances to bring out the maximum flavor and texture of each. We will discuss which general types and flavor profiles exist within the realm of sambal and conclude with a tasting. Disposable gloves will be provided to protect your hands, but if you are sensitive to spices or chilies, please bring your own protective eyewear.

Sambalogy - An intensive study of Indonesian Sambal

You will learn:

-How to re-think your own cooking speed and capabilities
-Optimized recipe, shopping, and cooking techniques
-How to do multi-recipe integration
-How to build a customized, flexible meal plan

This class is a primer on how to think about meal prep from the perspective of your own goals and cooking abilities whether they are focused on nutrition, cost, or taste. This class will prioritize discussion between the students and instructor on how to best take advantage of your kitchen arsenal so you can have the best of many culinary worlds and eat better, faster, smarter, and cheaper.
